
Low-Fat Pumpkin Pie
Just because it’s not Thanksgiving doesn’t mean you can’t enjoy a slice of pumpkin heaven. This recipe is spiced to perfection and low-fat. When your family is craving a sweet treat, forget eating cake — let them eat pie.
Ingredients
- 15 ounce(s) can solid pack pumpkin
- 14 ounce(s) can fat free sweetened condensed milk
- 1/2 cup(s) egg substitute
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) ground cinnamon
- 1/2 teaspoon(s) ground nutmeg
- 1/2 teaspoon(s) ground ginger
- 1 (9 inch) unbaked pastry shell
Instructions

In a large mixing bowl, combine the first seven ingredients; beat just until smooth.

Pour into pastry shell.

Bake at 425 degrees for 15 minutes.

Reduce heat to 350 degrees; bake 25-30 minutes longer or until a knife inserted near the center comes out clean.

Cool on a wire rack.

Store in the refrigerator.
