Herbed Artichokes

Tender artichokes infused with lemon, garlic and herbs makes this dish so fragrant and delicious you won’t even need to dip them in butter.

Ingredients

  

  • 4 artichokes
  • 1/2 lemon
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 2 tablespoon(s) olive oil
  • 1 1/2 teaspoon(s) oregano
  • 1 1/2 teaspoon(s) tarragon
  • 1/4 teaspoon(s) thyme
  • 1/4 teaspoon(s) black pepper
  • 1 sea salt, to taste
  • 1 water

Instructions

 

  • Wash, clean and trim artichokes.
  • Fill a large 2-quart pot 1/4 of the way full with water and bring to a boil.
  • Add all ingredients to the water – squeeze the lemon first and then put the whole thing into the water.
  • Return to a boil.
  • Add artichokes stem side down (to moisten) and then flip so that the stems are up.
  • Cover, reduce heat to medium-low and let cook for about 45 minutes.
  • Use tongs to remove artichokes when done and strain upside down in a colander.
