Sweet & Sour Cabbage

Ingredients

  

  • 1 cooking oil spray
  • 2 small Fuji apples, cored and chopped
  • 1/4 cup(s) low-fat chicken broth
  • 1 dash(es) salt
  • 1 dash(es) freshly ground black pepper
  • 1 sweet onion
  • 1 tablespoon(s) red wine vinegar
  • 4 cup(s) chopped red cabbage
  • 2 tablespoon(s) red current jelly

Instructions

 

  • Saute onion in oil sprayed nonstick saucepan.
  • Add the apple and vinegar and season to taste with salt and pepper.
  • Add the cabbage and stir to mix well.
  • Cover and cook over medium heat for 10 minutes.
  • In a small bowl, mix together the chicken stock and jelly.
  • Stir into the cabbage.
  • Cover and cook until tender, about 10 minutes.
  • Salt and pepper to taste.
