Veal with Capers

There's nothing plain but plenty simple with this veal dish. Prepared with capers, it's an easy fix that can be made in a matter of minutes. We promise it will make it into your recipe repertoire.

Ingredients
  

  • 5 1.5-oz. veal eye round pieces, pounded thin
  • 1 salt and pepper
  • 1 flour, as needed
  • 1 clarified butter, as needed
  • 1 1/2 ounce(s) white wine
  • 2 tablespoon(s) capers
  • 1 tablespoon(s) whole butter
  • 1 1/2 ounce(s) lemon juice (juice of one fruit)

Instructions
 

  • Dry veal and season with salt and pepper.
  • Saute veal in clarified butter until brown on both sides.
  • Deglaze pan with wine.
  • Add capers.
  • Finish with whole butter and lemon juice; adjust seasoning to taste.
