Papaya Sorbet
I scream, you scream, we all scream for ice cream. Unfortunately, it's a full-fat treat that's sweet on your lips but heavy on your hips. Why not sweeten the pot with a scintillating sorbet with papaya that's sure to bowl you over?

- 1/4 cup(s) granulated sugar
- 2 floz fresh lime juice
- 2 large papayas, peeled (2 cups pureed papaya)
- 6 floz water
In a small saucepan, combine the sugar and 3/4 cup of water.
Cook over moderate heat, stirring constantly to dissolve the sugar, and then bring just to a boil.
Remove from the heat and let cool to room temperature.
Pour the syrup into a bowl set over a larger bowl of ice and stir until cool.
Add the limejuice and pureed papaya.
Scrape the mixture into an ice cream maker and freeze according to the manufacturer's directions.
