- 1 tablespoon(s) spices, paprika
- 1 cup(s) gourmet fish stock
- 1/2 tablespoon(s) lobster base
- 1 cup(s) heavy cream
- 3 tablespoon(s) cornstarch
- 3 tablespoon(s) beverages, water, tap, drinking
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 12 large sea scallops
- 1 tablespoon(s) blackening seasoning
- 1 cup(s) salsa, roasted corn
To make shellfish cream, place first four ingredients in saucepan and bring to boil, stirring occasionally.
Thicken with cornstarch slurry; add salt and pepper to taste.
Keep warm.
Season scallops with blackening spice.
Grill scallops 4-5 minutes on each side.
Place cup of the corn salsa in the center of a plate.
Arrange 3 scallops around the salsa.
Place 2 oz shellfish cream on each plate.
Best served as an appetizer.
