Best Couscous Salad

Couscous is a versatile grain that is traditionally prepared in a Moroccan style, but can be dressed up and paired with just about any meal. With a boost of cranberries, our version is loaded with health-boosting antioxidants that will leave you feeling great.

Ingredients
  

  • 2 tablespoon(s) extra virgin olive oil
  • 1 medium onion, chopped
  • 1 teaspoon(s) salt
  • 1/2 cup(s) dried cranberries
  • 1 tablespoon(s) curry powder
  • 1 cup(s) vegetable broth
  • 1 cup(s) couscous
  • 2 cup(s) fresh baby spinach leaves

Instructions
 

  • Put the oil in large saucepan.
  • Saute onion briefly.
  • Add salt, dried cranberries & curry powder.
  • Cook, stirring, until onions are softened.
  • Add broth & bring to a boil.
  • Stir in couscous.
  • Remove from heat.
  • Cover and let stand 5 minutes.
  • Stir in spinach, cover & let stand additional 2 minutes.
  • This wilts the spinach but doesn't cook it.
  • Fluff with a fork & enjoy.
  • Ready in 15 min.
