Best Couscous Salad
Couscous is a versatile grain that is traditionally prepared in a Moroccan style, but can be dressed up and paired with just about any meal. With a boost of cranberries, our version is loaded with health-boosting antioxidants that will leave you feeling great.

- 2 tablespoon(s) extra virgin olive oil
- 1 medium onion, chopped
- 1 teaspoon(s) salt
- 1/2 cup(s) dried cranberries
- 1 tablespoon(s) curry powder
- 1 cup(s) vegetable broth
- 1 cup(s) couscous
- 2 cup(s) fresh baby spinach leaves
Put the oil in large saucepan.
Saute onion briefly.
Add salt, dried cranberries & curry powder.
Cook, stirring, until onions are softened.
Add broth & bring to a boil.
Stir in couscous.
Remove from heat.
Cover and let stand 5 minutes.
Stir in spinach, cover & let stand additional 2 minutes.
This wilts the spinach but doesn't cook it.
Fluff with a fork & enjoy.
Ready in 15 min.
