Whole Hearth Soup

Wonderful vegetarian soup with carrot, onion, garlic, cabbage, green beans, tomato paste and zucchini no fat at all! Be sure to include your herbs for the best taste possible.

Ingredients
  

  • 33/50 cup(s) sliced carrots
  • 1/2 cup(s) sliced onion
  • 2 garlic cloves, minced
  • 3 cup(s) fat free broth
  • 1 1/2 cup(s) diced green cabbage
  • 1/2 cup(s) fresh green beans
  • 1 tablespoon(s) tomato paste
  • 1/2 teaspoon(s) dried basil
  • 1/4 teaspoon(s) dried oregano
  • 1/4 teaspoon(s) salt
  • 1/2 cup(s) diced zucchini

Instructions
 

  • In large saucepan, sprayed with nonstick spray, saute carrot, onion, and garlic over low heat until softened, about 5 minutes.
  • Add broth, cabbage, beans, tomato paste, basil, oregano and salt.
  • Bring to boil.
  • Lower heat and simmer covered about 15 minutes or until green beans are tender.
  • Stir in zucchini and heat 3-4 minutes.
  • Serve hot.
  • Ready in 40 min.
