- 1 pound(s) rigatoni pasta, uncooked
- 1 clove garlic, minced
- 2 tablespoon(s) olive oil
- 2 bunches broccoli, cleaned and trimmed
- 1 1/2 cup(s) turkey breast, cooked
- 1 can beans, drained and rinsed or use 2 cans white beans
- 1/4 cup(s) sun-dried tomatoes, drained, chopped
- 14 1/2 ounce(s) chicken broth
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) pepper
- 1/4 cup(s) freshly grated Parmesan cheese
In a large saucepot of boiling salted water, cook pasta as package directs.
Meanwhile, in a large nonstick skillet, over medium heat, saute garlic in oil until lightly browned.
Add broccoli and toss to coat; cover and cook about 3 minutes, until just wilted.
Stir in turkey, beans, tomatoes, broth, salt, and pepper.
Simmer, uncovered 5 minutes.
Drain pasta; toss with the bean mixture.
Sprinkle with cheese.
