Taco Casserole
This Mexican medley is sure to be the taco the town. A healthy combination of hearty ingredients culminates into one tasty dish that will please your palate... and your family.

- 16 ounce(s) lean ground beef
- 1 (27 oz.) canned dark red kidney beans, drained and rinsed
- 1/2 cup(s) onions, chopped
- 1 cup(s) frozen corn, thawed
- 7 1/2 teaspoon(s) low-sodium taco seasoning mix
- 1/4 cup(s) low-fat cheddar cheese, shredded
- 1 22/25 cup(s) no-salt-added tomato sauce
- 2 ounce(s) baked tortilla chips, crushed
Preheat oven to 400.
Prepare a 11" x 7" casserole dish with cooking spray; set aside.
In a large saucepan, cook beef and onions until meat is no longer pink.
Add taco seasoning mix, tomato sauce, kidney beans, and corn.
Simmer for a ten minutes.
Spread mixture into prepared dish.
Sprinkle top evenly with cheese and tortilla chips.
Bake for 20 minutes, or until heated through.
