This Mexican medley is sure to be the taco the town. A healthy combination of hearty ingredients culminates into one tasty dish that will please your palate... and your family.

Ingredients
  

  • 16 ounce(s) lean ground beef
  • 1 (27 oz.) canned dark red kidney beans, drained and rinsed
  • 1/2 cup(s) onions, chopped
  • 1 cup(s) frozen corn, thawed
  • 7 1/2 teaspoon(s) low-sodium taco seasoning mix
  • 1/4 cup(s) low-fat cheddar cheese, shredded
  • 1 22/25 cup(s) no-salt-added tomato sauce
  • 2 ounce(s) baked tortilla chips, crushed

Instructions
 

  • Preheat oven to 400.
  • Prepare a 11" x 7" casserole dish with cooking spray; set aside.
  • In a large saucepan, cook beef and onions until meat is no longer pink.
  • Add taco seasoning mix, tomato sauce, kidney beans, and corn.
  • Simmer for a ten minutes.
  • Spread mixture into prepared dish.
  • Sprinkle top evenly with cheese and tortilla chips.
  • Bake for 20 minutes, or until heated through.
