Sweet Potato & Banana Casserole
You will be rolling over once you taste how delectably delicious this meal is. Sweet potatoes and bananas blend so deliciously well in this sinful casserole. It's hard to believe something so good can be so darn simple to make.

- 6 medium sweet potatoes
- 2 eggs, separated
- 3/4 cup(s) mashed banana
- 1/4 cup(s) butter, softened
- 1/2 teaspoon(s) finely grated lemon peel
- 1/2 teaspoon(s) salt
In a large saucepan cook sweet potatoes, covered, in enough boiling salted water to cover for 30 to 40 minutes or until tender and drain.
Peel potatoes; mash with an electric mixer at low speed.
Beat in mashed banana, butter, lemon peel, and salt.
Beat until fluffy; add egg yolks and beat well.
Beat egg whites until stiff peaks form; fold into sweet potato mixture and spoon sweet potato mixture into a buttered 1 1/2-quart casserole.
Cover and bake at 350 degrees for 20 minutes; uncover and bake 20 to 25 minutes longer.
Ready in 1 hour.
