Stuffed Mushrooms
This quick appetizer is a crowd pleaser at any gathering. Lighten it up with margarine and less cheese than traditional recipes while still keeping the fabulous taste.

- 1 tablespoon(s) olive oil
- 1 tablespoon(s) Smart Balance Light buttery spread
- 1/4 cup(s) Italian bread crumbs
- 4 tablespoon(s) parmesan grated cheese
- 2 cloves of garlic or 1 tbsp. dried
- 30 medium-sized fresh mushrooms
Wash mushrooms and remove stems carefully.
Chop up stems in a chopper or food processor.
Saute garlic in olive oil and butter over low heat for a couple of minutes.
Add in chopped mushrooms and saute for another 5 minutes.
Add in bread crumbs and parmesan cheese to mixture.
Remove from stove and spoon mixture into each mushroom cap.
Place on cookie sheet.
Bake on 350 for 30 minutes.
6 mushrooms equals one serving.
