Shrimp & Pasta

This splendid seafood pasta is enriched by the addition of fresh mushrooms and zucchini. Serve with French bread and a green salad for a complete dinner perfection.

Ingredients
  

  • 4 ounce(s) pkg. Rotelle macaroni
  • 3 tablespoon(s) extra virgin olive oil
  • 16 ounce(s) med. shrimp, cleaned
  • 1 med. zucchini, sliced
  • 1 cup(s) mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 3/4 cup(s) jar of meatless spaghetti sauce
  • 1/4 teaspoon(s) pepper

Instructions
 

  • Prepare pasta as directed on package; drain.
  • Meanwhile, heat 2 tbsp of the oil over medium heat in 12-inch skillet.
  • Add the shrimp and saute' until pink, about 3 minutes; remove shrimp.
  • Add remaining oil, zucchini, mushrooms and garlic; saute' until zucchini is crisp-tender, about 6 minutes.
  • Stir in spaghetti sauce and pepper.
  • Bring to a boil, reduce heat, cover and simmer 6 minutes.
  • Stir in shrimp, and heat thoroughly.
  • Serve over pasta.
