Ingredients
  

  • 2 large onion, fine dice
  • 16 tablespoon(s) clarified butter
  • 2 cup(s) all purpose flour
  • 10 cup(s) half-and-half
  • 64 tablespoon(s) heavy cream (1 quart)
  • 1 1/2 teaspoon(s) mace
  • 8 floz high-quality sherry, plus a little extra for garnish
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste
  • 16 ounce(s) fresh Atlantic blue crab meat

Instructions
 

  • In a large stockpot cook onions in butter until soft.
  • Add flour; reduce heat to low, stirring constantly for 15 minutes.
  • Add milk products; continue stirring.
  • Add remaining ingredients and simmer 30 minutes, stirring frequently.
  • You must use high-quality crab meat to obtain the desired soup.
  • Serve topped with a splash of sherry.
