Scalloped Potatoes
Our scalloped potatoes recipe has plenty of appeal. With low-fat, low-calorie ingredients, you don't have to worry about feeling guilty as you indulge in a helping of these palate-pleasing potatoes.

- 1 medium onion, chopped
- 1/2 teaspoon(s) freshly ground black pepper
- 1 teaspoon(s) salt
- 1/8 teaspoon(s) dry mustard
- 40 ounce(s) potatoes, pared and very thinly sliced
- 2 cup(s) skim milk
- 1 tablespoon(s) flour
- 1 cup(s) low fat chicken broth
- 1 paprika, as much as desired
Preheat oven to 375 F.
Prepare 2 quart baking dish by spraying lightly with cooking oil spray.
Saute onion over medium heat in nonstick in small amount of low-fat chicken broth.
Whisk flour, spices, milk and chicken broth together.
Layer potatoes, then onions and liquid mixture, alternating layers.
Bake uncovered in 375 F oven for 50 to 60 minutes.
