  • 2 large eggs, beaten or egg substitute equivalent
  • 10 3/4 ounce(s) can of spinach
  • 1 tablespoon(s) reduced sodium soy sauce
  • 2 tablespoon(s) scallions, sliced

Instructions
 

  • Bring broth and water to boil, add noodles and cook 3 minutes.
  • Add eggs and cook 30 seconds; do not stir.
  • Add spinach and simmer 1 minute.
  • Add soy sauce and scallions; simmer 1 minute.
