Quinoa with Spinach and Feta

Quinoa - pronounced KEEN-wa - is a healthful whole grain, high in fiber and vitamins. Use it as a rice substitute and try it in this hearty, nutritious dish.

Ingredients
  

  • 1/2 cup(s) uncooked quinoa
  • 1 teaspoon(s) olive oil
  • 3 (2 - 3) cloves garlic, chopped
  • 2 cup(s) washed, chopped, fresh spinach
  • 33/100 cup(s) light feta cheese

Instructions
 

  • Wash and drain quinoa; add the quinoa and 1 cup cold water to pan, bring to boil, cover and cook until liquid is absorbed and quinoa is cooked, about 15 minutes.
  • Meanwhile, gently heat a fry pan with the oil, add the garlic and gently cook; add the spinach to wilt.
  • When quinoa is cooked, add to the fry pan, roughly crumble the feta and add to the pan.
  • Gently mix everything together and serve.
