Quick Rice & Peas

Instant rice and canned peas take a great deal of this busy work out of this quick dish. It's the ideal side dish for just about any protein staple. You can't go wrong.

Ingredients
  

  • 1 33/100 cup(s) chicken stock
  • 1 33/100 cup(s) canned sweet peas
  • 1 cup(s) instant rice
  • 1 cup(s) frozen spinach, thawed and drained
  • 1/8 teaspoon(s) salt
  • 1 tablespoon(s) butter
  • 1/4 cup(s) slivered almonds

Instructions
 

  • Combine stock, peas and spinach in a saucepan over medium high heat.
  • Boil 3 minutes.
  • Stir in rice and season with salt and pepper to taste.
  • Cover pan, remove from heat and let sit 5 minutes.
  • Add butter and fluff with a fork.
  • Sprinkle with almonds before serving.
