Pineapple Rice

Surely not another boring rice dish, the flavor-packed pineapple and green onions make this rice a great side dish for Asian and tropical inspired meals. Serve with chicken, fish or lamb.

Ingredients
  

  • 1 cup(s) brown rice
  • 2 teaspoon(s) oil
  • 2 garlic cloves, minced
  • 1 1/2 teaspoon(s) grated fresh ginger
  • 1/2 teaspoon(s) turmeric
  • 1/2 teaspoon(s) salt
  • 2 1/2 cup(s) water
  • 1 cup(s) pineapple chunks
  • 1/4 cup(s) chopped scallions
  • 1/2 cup(s) chopped cashews

Instructions
 

  • In a medium saucepan with a tight fitting lid, combine the rice, oil, garlic, ginger, turmeric and salt.
  • Saute for a minute or two, stirring constantly to prevent sticking.
  • Add the water and bring to a boil.
  • When the water boils, reduce the heat to low, cover and simmer for about 45 minutes, until the water is absorbed and the rice is tender.
  • Stir in the pineapple, scallions and cashews.
