Pineapple Fried Rice
An oriental flavored rice with a tantalizing fresh flavor is a great side for any Asian inspired dinner plate. Instead of ordinary fried rice, add some pineapple to recreate this classic side.

- 8 ounce(s) shrimp
- 8 ounce(s) chicken
- 1/2 cup(s) carrots
- 1/2 cup(s) cashews
- 1 cup(s) mixed vegetables
- 1/4 cup(s) soy sauce
- 8 ounce(s) cooked rice
- 1/2 pineapple, cored and peeled
Put vegetable oil and butter in a medium-hot saucepan.
When melted together, add all ngredients except rice and pineapple.
Saute until cooked, about 3 minutes.
Add rice; cook 1 more minute.
Put mixture in pineapple and serve.
