Mini Potato Knishes

If you can mash potatoes, you can whip up a batch of these gourmet knishes. Try your hand at this appetizing dish. It's as good as any deli offering.

Ingredients
  

  • 3 cup(s) mashed potatoes
  • 2 very large potatoes
  • 2 eggs, slightly beaten
  • 1 large onion, diced
  • 2 tablespoon(s) butter
  • 1 teaspoon(s) salt
  • 1/8 teaspoon(s) black pepper
  • 6 tablespoon(s) Matzoh meal
  • 1 egg yolk, beaten
  • 1/2 floz water

Instructions
 

  • Heat oven to 400 degrees.
  • Saute diced onion in a small amount of butter until golden brown.
  • In medium bowl, combine mashed potatoes, sauteed onion, eggs, butter, salt, pepper, and Matzoh meal.
  • Form mixture into small balls about the size of a walnut.
  • Brush with egg yolk mixture and place on a well-greased baking sheet and bake for 20 minutes or until well browned.
  • Ready in 40 min.
