Ingredients
  

  • 2 ounce(s) crumbled feta cheese
  • 1 pepperocini pepper, minced
  • 1/4 teaspoon(s) dry oregano
  • 3 tablespoon(s) olive oil, divided
  • 1 ounce(s) Kalamata olives, pitted and sliced
  • 8 ounce(s) salmon filet
  • 1 serving wild rice
  • 1 Grape tomatoes, halved

Instructions
 

  • Mix feta, pepper, oregano, 1 tbsp olive oil and olives.
  • Sear salmon in 2 tbsp olive oil and finish in 350-degree oven for approximately 10 minutes, or until medium-well.
  • Remove salmon from oven and cover with topping mixture.
  • Place under broiler until just browned.
  • Plate salmon on a bed of wild rice and garnish with tomatoes.
