Mashed Potatoes
During the holidays, mashed potatoes are the perfect accompaniment to almost any main meal. This is a great recipe when needing to cook for a large crowd and make a fantastic meal. Your guests will enjoy every spoonful.

- 30 potatoes (10-lbs.)
- 16 ounce(s) butter, softened
- 16 ounce(s) cream cheese, softened and cubed
- 4 cup(s) sour cream
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
Peel potatoes, cube and cook until tender.
Drain and place in mixing bowl.
(If mixer is not large enough, do in two batches.
Whip all ingredients until creamy.
Place in greased casserole and top with butter slices.
Bake at 350 degrees for about 30 - 60 minutes or until bubbly.
Optional ingredients: chives or paprika to top.
If making ahead: Prepare without baking and refrigerate.
Take out early in the morning and let sit to reach room temperature before baking.
Tip for lighter version: this recipe works well using light or low fat cream cheese and sour cream.
