Mashed Potatoes

During the holidays, mashed potatoes are the perfect accompaniment to almost any main meal. This is a great recipe when needing to cook for a large crowd and make a fantastic meal. Your guests will enjoy every spoonful.

Ingredients
  

  • 30 potatoes (10-lbs.)
  • 16 ounce(s) butter, softened
  • 16 ounce(s) cream cheese, softened and cubed
  • 4 cup(s) sour cream
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste

Instructions
 

  • Peel potatoes, cube and cook until tender.
  • Drain and place in mixing bowl.
  • (If mixer is not large enough, do in two batches.
  • Whip all ingredients until creamy.
  • Place in greased casserole and top with butter slices.
  • Bake at 350 degrees for about 30 - 60 minutes or until bubbly.
  • Optional ingredients: chives or paprika to top.
  • If making ahead: Prepare without baking and refrigerate.
  • Take out early in the morning and let sit to reach room temperature before baking.
  • Tip for lighter version: this recipe works well using light or low fat cream cheese and sour cream.
