Low-Fat Chicken Nuggets

Chicken nuggets get a bad rep for being fried and unhealthy. But these low-fat, kid-pleasing bites will please the kids and save you a trip to the drive-thru!

Ingredients
  

  • 3 boneless chicken breasts, cut into strips or chunks
  • 1 cup(s) plain yogurt
  • 4 cup(s) cornmeal stuffing mix

Instructions
 

  • Dip chicken pieces into yogurt to cover.
  • Roll in crushed stuffing mix.
  • Arrange on wire rack placed on a cookie sheet.
  • Bake in 350 degree oven 20 to 30 minutes until chicken is crispy.
  • Serve with honey, barbecue sauce, ketchup or other favorite dip.
  • (Leftovers also good cold for packing in lunch box or picnic basket).
