Italian Goulash

It looks like goulash, but it tastes like lasagna... without all of the guilt. This healthy meat and noodle medley is sure to satisfy without putting a dent in your diet efforts.

Ingredients
  

  • 32 ounce(s) lean ground beef
  • 1/2 teaspoon(s) black pepper
  • 1/2 cup(s) bell peppers, chopped
  • 8 ounce(s) whole wheat noodles, uncooked
  • 1/2 cup(s) onions, chopped
  • 8 floz water
  • 3 1/4 cup(s) low-fat spaghetti sauce
  • 1 cup(s) part-skim mozzarella cheese, shredded
  • 1 teaspoon(s) salt

Instructions
 

  • Preheat oven to 350.
  • Prepare a 13"x 9" casserole dish with cooking spray; set aside.
  • In a large pot, cook chicken, bell peppers, and onions over medium-high heat until beef is no longer pink.
  • Add spaghetti sauce, salt, black pepper, macaroni, and water.
  • Cook until macaroni is done.
  • Place mixture into prepared dish.
  • Bake, covered, for 25 minutes.
  • Remove from the oven and top with cheese.
  • Return to the oven and bake, uncovered, for 15 more minutes, or until thoroughly heated and the cheese has melted.
