Hummus With Tomatoes
We've got hummus that will leave you humming a happy tune. Fresh tomatoes give this traditional Mediterranean favorite a new twist. Serve with pita chips and crackers -- or simply enjoy it by the spoonful. It's good eating.

- 8 garlic cloves, peeled
- 1 3/4 teaspoon(s) salt
- 2 1/2 cup(s) cooked chickpeas
- 6 tablespoon(s) fresh lemon juice
- 5 tablespoon(s) olive oil
- 1/4 teaspoon(s) cayenne pepper
- 2 medium tomatoes, chopped
- 6 tablespoon(s) chopped fresh parsley
Blend garlic and salt together in food processor.
Add chickpeas, lemon juice, olive oil and cayenne.
Pulse until blended.
Place mixture in bowl and fold in tomatoes and parsley.
Taste for balance of flavors, adding more lemon juice, parsley or cayenne to taste.
Put hummus in serving bowl and drizzle with the olive oil.
Serve room temperature or chilled.
