Hearty Breakfast Casserole

Ingredients
  

  • 3 cup(s) frozen shredded hash brown potatoes
  • 1/4 cup(s) shredded cheese
  • 1 cup(s) diced fully cooked ham or Canadian bacon
  • 1/4 cup(s) sliced green onion
  • 1 cup(s) liquid egg substitute (or 4 eggs, beaten)
  • 12 floz evaporated milk
  • 1/4 teaspoon(s) pepper
  • 1/8 teaspoon(s) salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray 2 quart baking dish with baking spray.
  • Arrange potatoes evenly in bottom of dish.
  • Sprinkle with cheese, ham, and onion.
  • In medium bowl, combine eggs, milk, pepper and salt.
  • Pour over potato mixture.
  • Bake, uncovered, for 40-45 minutes, or until center appears set.
  • Let stand 5 minutes before serving.
