A little green goodness goes a long way! The name may be deceiving, but the result will absolutely seduce you and your guests. These green eggs are not eggs but fully aromatized bites of turkey.

Ingredients
  

  • 5 3/10 tablespoon(s) chopped parsley
  • 1/2 cup(s) chopped green bell pepper
  • 3 tablespoon(s) dill pickle relish
  • 33/100 tablespoon(s) dried basil
  • 1 teaspoon(s) dried oregano
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) black pepper
  • 2 egg whites
  • 16 ounce(s) extra-lean ground turkey
  • 1/4 cup(s) instant oatmeal
  • 1 tablespoon(s) olive oil

Instructions
 

  • Place parsley, bell pepper, relish, herbs, salt, pepper and egg whites in food processor fitted with metal chopping blade.
  • Cover and pulse until bell pepper is finely minced.
  • Add turkey and plain oatmeal; pulse 2 or 3 times, until just mixed.
  • Chill mixture 15 minutes.
  • Preheat oven to 325 degrees.
  • Use a spoon to form oval, egg-shaped meatballs (about 1.
  • 5 oz per egg).
  • Heat olive oil in nonstick skillet over medium heat.
  • Brown meatballs on all sides, and place on nonstick baking sheet.
  • Bake until juices run clear (about 10 to 15 minutes).
  • Serve warm, sliced into quarters, with dipping sauce.
