Grated Cauliflower

This super side dish will be "grate" served with grilled meats, baked chicken or any other main staple you choose. For a quick and easy one-dish meal, add a palate-pleasing protein.

Ingredients
  

  • 1 head of cauliflower
  • 3 garlic cloves
  • 1 green pepper
  • 1 red pepper
  • 4 celery stalks
  • 3 small zucchini
  • 2 tablespoon(s) oil
  • 1/2 cup(s) broth or stock
  • 12 tablespoon(s) tomato paste (1-6 oz. can)
  • 3 teaspoon(s) ground cumin
  • 2 teaspoon(s) dried oregano
  • 1 teaspoon(s) red pepper flakes
  • 1/2 teaspoon(s) salt
  • 1 teaspoon(s) lemon pepper

Instructions
 

  • Grate or process the head of cauliflower to reach a very thin texture.
  • Chop the garlic, onions, peppers, zucchini and celery.
  • You can do all of this in the food processor.
  • Heat the oil in a large saute pan.
  • Saute the vegetables together until heated through.
  • Add stock and lower the heat, stirring often.
  • When cauliflower starts to soften, add the tomato paste and spices and cook over low heat until the texture of cooked rice.
  • Adjust seasonings to taste.
  • Add more stock or broth as necessary as the vegetables cook to maintain the rice texture This can be made ahead and it freezes well.
  • Ready in 25 min.
