Classic Chicken Loaf
Don't be a chicken. Give this poultry pleasing casserole a try. This main course includes rice and a tasty green olive sauce for a decadent dinner. Prior to baking the casserole, the chicken will need to be boiled and deboned.

- 1 cup(s) bread crumbs
- 3 tablespoon(s) chicken fat or butter, melted
- 2 cup(s) chicken broth or milk
- 1 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
- 3 tablespoon(s) chicken fat or butter
- 3/16 cup(s) flour
- 1 cup(s) chicken broth
- 3 tablespoon(s) cream
- 1 teaspoon(s) minced parsley
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) paprika
- 1/4 cup(s) stuffed olives, sliced
Boil chicken.
Remove meat from bones and cut into small pieces.
Beat eggs slightly; stir in rice, breadcrumbs, fat or butter, broth or milk, seasonings and chicken; spoon into greased 1 1/2-quart casserole and bake at 350 degrees for 50 minutes or until firm.
For the sauce: Blend fat and flour.
Stir in chicken broth and cream.
Cook slowly until thickened, stirring constantly.
Add parsley, salt and paprika.
Add olives or a combination of both.
Ready in 1 hour and 10 min.
