Christmas Eve English Cake
Twas the night before Christmas and all through the house was the aroma of this excellent English cake that's rich in fruits and spices. Bring out the richness of the holidays.

- 4 ounce(s) self- raising flour
- 4 ounce(s) plain flour
- 36 teaspoon(s) sugar
- 12 tablespoon(s) butter
- 3 eggs
- 3 teaspoon(s) mixed spice
- 3 tablespoon(s) orange rind, grated
- 2 tablespoon(s) lemon rind, grated
- 1/8 cup(s) almonds, chopped
- 8 ounce(s) mixed currants, sultanas and raisins
- 2 ounce(s) candied peel
- 2 tablespoon(s) marmalade
Preheat oven to 300 degrees and lightly grease 8-inch cake pan.
Cream butter and sugar together until light.
Add eggs and mix well.
Stir in flour, grated lemon and orange rind, and mixed spice.
Fold in almonds, and mixed fruits.
Bake for approximately 3 hours.
Remove when done and cool on a rack.
Turn out of pan and glaze top with marmalade.
Ready in 3 hours.
