Ingredients
  

  • 1/2 floz salad oil
  • 1 clove garlic, minced
  • 1 carrot, chopped
  • 2 pieces celery, chopped
  • 1 small onion, chopped
  • 2 cup(s) chicken broth
  • 2 cup(s) vegetable juice or water
  • 1 (16 oz.) can tomatoes and juice
  • 1/4 teaspoon(s) dried basil
  • 1/4 teaspoon(s) dried thyme or oregano
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 15 4/5 ounce(s) can green peas
  • 1/2 cup(s) elbow macaroni
  • 1/4 cup(s) Parmesan cheese

Instructions
 

  • Heat oil in Dutch oven or heavy saucepan.
  • Add garlic, carrot, celery and onion.
  • Saut 5 minutes.
  • Add broth, vegetable juice, tomatoes, basil, thyme, salt, pepper, and green peas.
  • Bring to boil.
  • Simmer 10 minutes.
  • Add macaroni.
  • Cook 10-15 minute, stirring occasionally until macaroni is tender.
  • Serve in soup bowls topped with a sprinkle of Parmesan cheese.
  • Ready in 35 min.
