Chicken & Couscous
If you're bored with the same old chicken dishes, this gourmet option brings a healthy and hearty option to the table. This couscous dish is so nice you will have to eat it twice!

- 1 tablespoon(s) olive oil
- 1 small red onion, chopped
- 6 ounce(s) red bell pepper, cored, seeded and diced bell pepper
- 8 ounce(s) boneless, skinless chicken breast, cut into thin strips
- 1/4 teaspoon(s) black pepper
- 1/2 teaspoon(s) paprika
- 1/2 teaspoon(s) ground ginger
- 1/2 teaspoon(s) ground cumin
- 1 cup(s) low sodium chicken broth
- 1/2 cup(s) whole wheat couscous
Heat oil in large saute pan.
Add onion and saute 2 to 3 minutes.
Add bell pepper, cook 1 minute, then add chicken strips and cook over medium heat about 2 minutes.
Add black pepper, paprika, ginger, and cumin and cook 30 seconds.
Add chicken broth.
Bring to a boil.
Stir in couscous, remove from heat, cover pan and let stand 10 minutes or until couscous is tender and liquid is absorbed.
Serve immediately.
