Cajun Chicken Pasta

- 10 ounce(s) cooked fettuccine, cooked according to package directions
- 1 cup(s) spicy Cajun pasta sauce
- 1 tablespoon(s) grated Parmesan cheese
- 1 boneless chicken breast, cooked and sliced in strips
- 1 teaspoon(s) chopped parsley
- 2 ounce(s) olive oil
- 3 teaspoon(s) chopped garlic
- 1/2 cup(s) onions cut in large chunks
- 1/2 cup(s) green peppers, diced in large pieces
- 1/2 cup(s) red peppers, diced in large pieces
- 1/8 teaspoon(s) cayenne pepper
- 1 cup(s) chicken stock
- 8 floz vegetable juice
- 1 floz cold water
- 1 tablespoon(s) cornstarch, mixed with cold water to thicken
- 1 dash(es) salt
- 1 dash(es) pepper
Heat oil in saute pan.
Add garlic and saute for 30 seconds.
Add onions, saute one minute, then add peppers and continue to saute another minute.
Deglaze with chicken stock, reducing by half.
Add V-8 juice and cayenne pepper.
Bring to a boil and simmer for 10 minutes.
Thicken with cornstarch to desired consistency; season with salt and pepper.
Place pasta and spicy sauce in pan and heat until hot.
Arrange in serving dish and top with chicken breast.
Garnish with Parmesan cheese and parsley.
Ready in 30 min.
