Blue Cheese & Onion Orzo Pasta

Don't pasta away from boredom at dinner time. Revive and freshen up your plate with this dish. Soft Italian cheese and healthy green spinach all atop steaming hot orzo pasta is just enough to wake up your senses.

Ingredients
  

  • 1 pound(s) uncooked orzo pasta
  • 1 tablespoon(s) butter
  • 1 tablespoon(s) olive oil
  • 4 onions, sliced
  • 6 1/2 ounce(s) blue cheese, crumbled
  • 3 1/2 ounce(s) mascarpone cheese
  • 2 cup(s) shredded spinach
  • 1 dash(es) salt (to taste)
  • 1 dash(es) pepper (to taste)

Instructions
 

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, heat butter and oil in a large skillet over low heat.
  • Cook onion in this mixture until golden brown, 20 to 30 minutes.
  • Remove from pan with a spoon and drain on paper towels.
  • In a large bowl, combine blue cheese, mascarpone and onion and mix well.
  • Toss cheese mixture with spinach and pasta, season with salt and pepper and serve.
  • Prep time 10 min Cook time 35 min Ready in 45 min.
