Not a fan of pork? Beef sausage is a perfect substitute, which can be made ahead of time, frozen, then used in a variety of dishes, from spaghetti to sandwiches.

Ingredients
  

  • 5 pound(s) ground beef
  • 2 1/2 teaspoon(s) mustard seeds
  • 2 1/2 teaspoon(s) peppercorns
  • 1 teaspoon(s) hickory smoke salt
  • 1 1/2 teaspoon(s) liquid smoke
  • 4 ounce(s) water
  • 5 teaspoon(s) quick salt
  • 2 1/2 teaspoon(s) garlic salt

Instructions
 

  • Mix well all the ingredients.
  • Let stand overnight in "fridge".
  • Next day: roll into 2 loaves.
  • Wrap in foil.
  • Bake at 350 degrees for 1 1/2 hours.
