Baked Sweet Apricot

Apricots are one of those foods that are often forgotten. And sadly so. Sweet baked apricots served with ham is an easy, special brunch item, or you can serve it a la mode for a sweet summer treat.

Ingredients
  

  • 3 3/4 cup(s) 2 (15 oz.) cans apricot halves
  • 1/2 cup(s) butter
  • 1 cup(s) packed brown sugar
  • 1/4 cup(s) all-purpose flour
  • 32 crushed butter-flavored crackers (1 1/3 cups)

Instructions
 

  • Drain apricots, reserving 3/4-cup juice.
  • Place apricots in a greased 11 inch x 7 inch x 2 inch baking dish.
  • Melt 1/2-cup butter; add the brown sugar, flour and reserved juice.
  • Pour over apricots.
  • Bake, uncovered, at 350 degrees for 20 minutes.
  • Melt remaining butter; toss with crackers crumbs.
  • Sprinkle over top.
  • Bake 15-20 minutes longer or until golden brown.
  • Ready in 45 min.
