Bailey's Black Bean Burritos

Love burritos? Then you'll love these black bean blankets of goodness. Super good, super healthy and super easy to make; this is a great quick and easy meal and it is vegetarian. Bring on the beans!

Ingredients
  

  • 1 teaspoon(s) cumin
  • 1 teaspoon(s) garlic powder
  • 15 ounce(s) black beans, rinsed & drained
  • 1 can whole kernel corn, drained
  • 1/2 cup(s) salsa, thick & chunky
  • 1 green bell peppers, diced
  • 6 flour tortillas

Instructions
 

  • Spray skillet with non-stick cooking spray.
  • Add all ingredients except for the tortillas and cool for 10 minutes.
  • Heat tortillas in a covered microwave-safe container in the microwave for 1 minute rotating 1/4 turn halfway through cooking.
  • To serve, place ingredients in tortilla and fold end in & roll up burrito style.
  • Serve as is, or with salsa and light sour cream.
