Bacon-Broccoli Rigatoni

One bite of this rigatoni medley and you'll be bacon for more. The combination of bacon, broccoli and mozzarella blend together in this palate-pleasing pasta dish.

Ingredients
  

  • 8 ounce(s) uncooked dried rigatoni
  • 8 ounce(s) slices bacon, cut into 1-inch pieces
  • 2 cup(s) broccoli florets
  • 1/2 teaspoon(s) finely chopped fresh garlic
  • 2 cup(s) mozzarella cheese, shredded
  • 4 tablespoon(s) freshly grated Parmesan cheese
  • 1/8 teaspoon(s) ground red pepper
  • 4 tablespoon(s) chopped fresh parsley

Instructions
 

  • Cook rigatoni according to package directions.
  • Drain; set aside.
  • Meanwhile, in 10-inch skillet cook bacon over medium-high heat, stirring occasionally, until bacon is crisp (6 to 8 minutes).
  • Reduce heat to medium.
  • Add broccoli and garlic.
  • Cook, stirring occasionally, until broccoli is crisply tender (4 to 5 minutes).
  • Add cooked rigatoni, mozzarella cheese, and Parmesan cheese and ground red pepper.
  • Continue cooking, stirring occasionally, until cheese is melted (3 to 5 minutes).
  • Sprinkle with parsley.
