Aunt P's Tofu Scramble
This vegan, veggie packed breakfast scramble will satisfy the most voracious appetites. The only thing better than starting your day with a savory warm breakfast is knowing that it is super nutritious to boot. A touch of tofu never tasted so good!

- 1/2 yellow onion, diced
- 1/2 red bell pepper, diced
- 1 block firm or extra firm tofu, drained and pressed
- 2 tablespoon(s) olive oil
- 2 cloves garlic, diced
- 1 teaspoon(s) curry powder
- 1/2 teaspoon(s) dried parsley
- 1/4 teaspoon(s) Herbamare Organic Herb Seasoning Salt
- 1 tablespoon(s) Bragg Liquid Aminos or soy sauce
- 2 tablespoon(s) nutritional yeast
Slice the tofu into approximately one inch cubes.
Then, using your hands, crumble it slightly.
Saute onion, pepper, garlic and crumbled tofu in oil for 5-10 minutes, stirring often.
Add remaining ingredients, reduce heat to medium and allow to cook 5-10 more minutes, stirring frequently and adding more oil if needed.
