Apple Bran Muffins

These bran muffins are going to be the apple of your eye. They offer the great taste of your favorite breakfast cereal, only prepared in a muffin. Tastes great, less filling.

Ingredients
  

  • 1 1/4 cup(s) flour
  • 3 teaspoon(s) baking powder
  • 1/4 teaspoon(s) salt
  • 2 cup(s) raisin bran cereal
  • 1 cup(s) fat free milk
  • 1/2 cup(s) applesauce
  • 1 egg, slightly beaten
  • 1/3 cup(s) firmly packed brown sugar
  • 2 tablespoon(s) butter, melted

Instructions
 

  • Mix flour, baking powder, and salt in large bowl; let stand 3 minutes.
  • Stir in egg, applesauce, sugar and butter.
  • Add to flour mixture; stir just until moistened.
  • (Batter will be lumpy).
  • Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full.
  • Bake at 400 degrees F for 20 minutes or until golden brown.
