Lemon Avocado Dressing

Mashed avocado combined with lemon juice, mayonnaise, onion, salt and pepper, to be served over peeled and sliced tomatoes. These are all the ingredients for a delicious salad topper.


Lemon Avocado Dressing

Ingredients

For 1 people

  • 2 ripe avocados
  • 1 juice of a lemon
  • 1 tablespoon(s) mayonnaise
  • 1/3 tablespoon(s) onions, grated
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) freshly ground pepper, to taste
  • 3/4 cup(s) vegetable oil
  • 4 tablespoon(s) white wine vinegar

Directions

  1. Mash avocados until smooth with a silver fork or wooden spoon. Add lemon juice, mayonnaise, onion and salt and pepper to taste. Mix thoroughly.
  2. In a separate bowl, blend vegetable oil with white wine vinegar. Stir this into the avocado mixture.
  3. Serve over peeled and sliced tomatoes or toss with a green or seafood salad.
