Baked Omelet

Omelets are healthy, versatile morning kickstarters, and this one is no yolk! Ham it up with this baked omelet that features sweet peppers, velvety Swiss cheese, and green onions.


Baked Omelet

Ingredients

For 6 people

  • 3 green onions, sliced
  • 1/2 cup(s) sweet red peppers, chopped
  • 1 tablespoon(s) vegetable oil
  • 6 eggs
  • 1 cup(s) Swiss cheese, shredded (4 oz.)
  • 6 ounce(s) cooked ham, cubed
  • 2 2/3 ounce(s) water

Directions

In a 10 in. ovenproof skillet, sauté onions and red pepper in oil for 5 minutes. In bowl, combine the eggs, cheese, ham and water; pour over vegetable mixture. Bake uncovered, at 375 degrees for 15-20 minutes or until set.
