Ingredients
For 6 people
3 pound(s) pork roast, trimmed of fat
1 tablespoon(s) vegetable oil
1/4 cup(s) soy sauce
1 cup(s) coffee, brewed from grounds, prepared with tap water
2bay leaves, whole
2 cup(s) onions, sliced
1/2 teaspoon(s) spices, oregano, dried
1 clove of garlic, minced
Directions
Preheat oven to 300 degrees.
Heat oil in large skillet over high heat, and then sear meat on both sides. In a large roasting pan, combine one onion and remaining ingredients. Transfer browned meat to roasting pan and top with second onion.
Cover and bake 3 1/2 to 4 hours. Baste every hour with juices. If liquid begins to boil away, add more coffee or soy sauce as needed. Use pan juices to make gravy. Use no salt.
