For starters, he says that inflammation is the underlying cause of skin issues, and this inflammation is linked directly to the foods you eat. According to Dr. Perricone, people who feast on a pro-inflammatory diet are at risk for diseases including acne. These foods cause a spike in blood sugar, which, in turn, prompts an insulin response, and that causes an inflammatory response. Because of this, there is inflammation on a cellular level. The key is to keep blood sugar levels consistent.
