Tuna Salad

This beautiful and fragrant dish can be a tasty appetizer. It's also great for lunch or for a light dinner. It will appear creamy, fragrant and colorful. Serve it with bread.

    2 cups baby spinach leaf (set aside)
    2 cup white chicken (canned is fine)
    4 oz. feta cheese, crumbled
    2 Roma tomatoes, diced
    1 cup of broccoli slaw or cucumber, cut finely
    2 tbsp. of fresh basil
    1 tsp. lemon juice
    1 tbsp. fresh mint
    3/4 cup of mayonnaise
    Sea salt and pepper for taste
Methods/steps
Fold all ingredients together lightly until all is mixed well.
For appetizers, cut flat bread into quarters and put salad in bowl, add flat bread around bowl.
For lunch: fill pita bread; be sure to put baby greens in.
For dinner: get a colorful dish, add 1/2 cup of baby greens, top the salad mix, add quarter toasted pita bread on the side.
