Tofu & Mushroom Skillet
Even if you aren't a vegetarian, tofu makes a great staple. Kids also prefer the texture of this meatless wonder. In this recipe, the flavors of soy sauce, sherry, ginger and garlic make for an amazing stir fry.

1/4 lb. mushrooms, chopped 2 tbsp. lite soy sauce 1/4 cup dry sherry or vegetable stock 2 tbsp. fresh ginger, minced 3 cloves garlic, minced 1 lb. carrots, sliced 1 lb. tofu, thinly sliced 1 tsp. vegetable oil 1 lb. snow peas 1 bunch of scallions, cut into 1-inch pieces
Combine first 7 ingredients in a bowl and marinate 30 minutes. Heat oil in a heavy skillet over medium high heat. Add tofu mixture and stir-fry 3-4 minutes. Add remaining ingredients and stir-fry 3-4 minutes or until carrots are tender.
