Sweet Ricotta Cones
It's a cannoli in a cone. All of the great ingredients of the Italian favorite, only in a different shape. The kids will love them!
At a glance
15 oz. part-skim ricotta cheese
2/3 cup confectioners' sugar
1/2 tsp. grated orange peel
1/2 tsp. vanilla extract
2 tbsp. miniature chocolate chips
10 sugar ice cream cones
In a large bowl with electric mixer at low speed, beat ricotta cheese, sugar, orange peel and vanilla extract just until smooth. Stir in chocolate chips. Cover and refrigerate for 30 minutes. To serve, spoon mixture directly into ice cream cones.
