Sweet Hearts of Palm Salad
Hearts of Palm are obtained from the Cabbage Palmetto plant, which is native to the Southeastern United States and the Caribbean. This tasty salad makes a great intro for a fish entree; serve it with a dry and chilled white wine.

Ingredients
    1 can of hearts of palm
    Spinach leaves, trimmed, washed and well dried
    6 tbsp. vegetable oil
    3 tbsp. fresh lemon juice
    1/2 tsp. salt
    1/2 tsp. granulated sugar
    1/4 tsp. paprika
    1/2 tsp. aromatic bitters
    1 tbsp. finely minced celery
    2 tbsp. finely minced pimento-stuffed green olives
    2 tbsp. finely minced scallions (with tops)
    Pimento for garnish
Methods/steps
Arrange hearts of palm, sliced lengthwise, on spinach leaves. Combine remaining ingredients except garnish and pour over the salad. Garnish with pimento.
