Southernized Asian Scallops

The best of two distinct worlds collide with the Southernized Asian Scallops recipe. A traditional Asian scallop dish with a Southern twist. Ya'll come back now, ya hear?
Ingredients
2 tbsp. vegetable oil
2-5 large or Diver scallops
2 eggs, slightly beaten
1/2 cup yellow grits
1 cucumber, peeled and seeded
1 tbsp. wasabi powder
1/2 cup mayonnaise
Methods/steps
Heat oil in sauté pan. Dip one side of scallop in egg, then in grits. Coat well. Place scallop, grit side down, in pan and sauté until golden brown. Turn scallop over and sauté 30 seconds. Drain on a rack. To make sauce, combine cucumber, wasabi powder and mayonnaise in food processor until combined.
